  • Why are there Health Benefits in Eggplant

    Also known as aubergine or brinjal depending on geographical location, eggplant is a member of the nightshade botanical family which also includes tomatoes and potatoes.
    Contrary to popular belief, nightshade vegetables are not uniquely inflammatory nor do they worsen inflammatory conditions such as arthritis.

                               

     

    Although not particularly rich in many vitamins or minerals (aside from potassium), eggplants do contain a wide array of antioxidant compounds including anthocyanins which are responsible for its purple colour.
